Paula Bosch SEP22: This single-varietal Pinot Noir was pressed white, given 5 years to mature in the bottle and bottled without dosage. The result is a very spicy, uncompromising, bone-dry Champagne with a salty note, a powerhouse with great character. If you are looking for a link to Burgundy in Champagne J.M. Labruyere, you have the best example with Paradoxe. Despite the tremendous richness in the mouth - a whole cello concerto takes place here - each sip remains in harmony and balance, without corners and edges, the fine, compact mousse caresses the palate. The animating acidity makes the Paradoxe an ideal food companion from caviar to langoustine, Breton turbot in Beurre Blanc with morels to a zabaglione with crepes and caramel ice cream. What distinguishes this champagne is its seasoning full of character. Moritz OCT22: The beautiful rose gold is radiant in the glass. The paradox is characterized by an angular dark berry fruit. The mousseux is very juicy and gives the champagne a pleasant freshness. The finish is long and slightly tart, which gives the wine even more excitement.

100% Pinot Noir Dosage: 0g/l Benoit Marguet cultivates only 0.7 hectares in Bouzy. The vines for the Bouzy Grand Cru Extra Brut are grown in the Lieu dits Les loges and Les Hannepés and are fermented individually in wood. The barrels vary from second to ninth occupancy. Since 2010 the plants have been plowed manually with the horse. Marguets champagne is generally neither enriched nor given a shipping dosage. It works with minimal intervention, without pumps and with little to no use of sulfur. Description of Sebastian Bordthäuser: Nose: The 2015 Bouzy by Champagne Marguet is powerful and demanding on the nose. Walnut biscuits and yeast plaits as well as roasted Piedmontese hazelnuts provide the steep template, followed by citric notes of zests and an oxidized, red-cheeked apple. Salted caramel and fresh white mushroom mix with a delicate smoky note, which is underlaid with herbal notes of borage and a drop of bitter almond oil. A champagne that unmistakably calls for the large glasses, but preferably after five years of bottle aging. Mouth: With a creamy initial taste and a fine pearly mousseux, the 2015 Bouzy has a substantial, opulent palate with an immediate presence from the first drop. Its fruit shines over the extract and is supported by the delicate phenolics of the champagne, which gives it a smoky to spicy back-up. Orange blossom water and Darjeeling make the extremely dry wine appear fruity and tart, balanced by the extract-rich core and its multi-layered, complex and long aftertaste with a spicy, warm finish. No squeamish champagne that still has the best of manners. 100% Chardonnay Dosage: 0g/l L’Amateur is the house's entry-level cuvée, a blend of six different parcels in Trépail. This single-origin Chardonnay is vinified in enamelled 33 hl steel tanks - Léclapart does not use stainless steel tanks because he is convinced that this generates negative energy. Like all of the house's wines, L'Amateur goes through malolactic fermentation, there is no fining or filtration whatsoever. The result is a powerful Chardonnay, pure and without make-up with a mineral bite. Léclapart's champagnes are different, headstrong and fascinating. The "L'Amateur" is particularly recommended for getting to know the style, as it already gives an idea of what is still to be discovered. Be sure to carafe or ventilate for a long enough time! Peter Liem: The entry-level cuvée is called L’Amateur, blended from five different parcels in Trépail and vinified entirely in enameled 33 HL. steel tanks—Léclapart has no stainless steel anywhere in his cellar, as he believes that it promotes negative energy.
