Tasting FEB20: Extremely complex, perfectly developed, currently only a few tertiary aromas (aromas that arise during ripening such as dried fruit, nuts, cocoa, leather, etc.), very lively aromas, powerful, spicy, unbelievably tingling complexity. The freshness bubbles into the brain and ensures a reboot!
Tasting description of the winery: The complex nose shows aromas of red and black currants and cherries, which mix with delicate hints of wood, underpinned by vanilla, cinnamon and pear. Furthermore citrus fruits (lemon, tangerine), peach and roasted apricots. The flavors on the palate are initially pure and of enormous density, interrupted by a hearty minerality. Then the Chardonnay presents itself with its palette of butter brioche and toast notes that merge into coffee and chocolate.
Serving recommendation from the winery: To enjoy this champagne at its best, we recommend decanting it at 12 ° C about 30 minutes before tasting, so that the dormant energy that is retained during the long years of aging can fully express itself . This great wine goes well with unusual dishes such as sea urchin and crab soup with saffron, a risotto with truffles and Parmesan or an excellent piece of lightly grilled beef
