Instead of a Saignee, this is a blend of 4-8% red wine (Bouzy Rouge), vinified in wood for one year. The rosé from Billot is particularly celebrated and prized in the USA for its expressiveness and extreme vinous character. It is less a siren for fans of fresh, mineral-driven rosés, and eschews the heavy earthy character of a Rosé de Saignee. Billiot's decision to forgo the Saignee method is typical for the domaine, with wines noted for their vinous nature, body, balanced and expressiveness, all while maintaining a cool and refreshing character. No one component is allowed to tower above the rest.
