Today's champagne house was founded by Pierre Philipponnat in 1910, and the Philipponnat family has been growing champagne since the 16th century. Since 1999 the House is under the direction of Charles Philipponnat, Pierre's great-nephew, it has undergone further quality improvements.

The winery has 20 hectares of vineyards, including 18 hectares of its own vineyards around Mareuil-sur-Aÿ (11 hectares), Aÿ, Avenay Val d’Or and Mutigny. The famous Clos des Goisses location makes up 5.8 hectares of the 11 hectares in Mareuil-sur-Aÿ.

The new wine cellar, which was completed in 2004 near the Mareuil-sur-Aÿ vineyards, made it possible to shorten the transport route that the grapes go through and thus improve the quality once again.

While the wines of the Clos des Goisses are always produced without malolactic, the other champagnes contain a portion of malolactic wines, depending on the cuvée and vintage.
The house traditionally matures the wines in tanks or old oak fuders; since 2000, Clos des Goisses has been matured to 40 to 50 percent in 228 liter oak barrels. The dosage is low, around 4-5 grams for all vintage champagnes, around eight grams per liter for the non-vintage Royale Réserve.

The house has also changed the way the dosage is handled. While in the past wine from the stainless steel tank was always used for dosing, since 2005 the wine has been briefly filled into a barrel before it is mixed. Charles Philipponat says: "It has a little more bite, some tannins".
