The Fil de Brume (French for wafts of mist) Brut by Cyriel Jeaunaux opens with fine yeast and brioche notes. One cannot help but think of a Parisian pâtisserie that mainly bakes tarts with lemon and stone fruit.
On the palate, the Fil de Brume, which in French means something like wafts of mist that often drift through the small valley in the morning, is initially much crisper and has more pressure than the brioche nose betrayed.
