100% Pinot Noir
From vineyards in Chamery. The topsoil there consists of calcareous loam interspersed with limestone pebbles, the subsoil of sands and fossil shells.
The grapes were only partially destemmed, fermentation was initiated spontaneously and the Pinot fermented for 20 days in 300-litre amphorae, in which it then matured until July 2021. The wine was bottled without the addition of sulphur.
Nose: The absence of sulphur ensures that this wine is very open right from the start and it also smells very typically of unsulphured Pinot, where yeast and knobbly cherries meet wild berry yoghurt and a fresh and still warm raspberry tart.
Taste: Juicy and lively. Here, too, the openness is evident in combination with the fine-pored texture so typical of amphora ageing. This is a Pinot that now wants to be drunk with pleasure and appears very drinkable. The juicy cherry notes that oscillate between ripeness and acidity contribute to this, as does the hint of carbonic acid that can still be sensed on the tip of the tongue, and likewise the taut mouthfeel.
