Benoît Lahaye Violaine 2016 - Bio
50% Chardonnay, 50% Pinot Noir Dosage: 0g/l Vinification in wooden barrels Unfiltered, unsulphurized Slightly smoky notes, energetic and powerful! Peter Liem: In the 2008 vintage, Lahaye began making a sans soufre champagne, called Violaine. Made of equal parts chardonnay and pinot noir, this comes from two adjacent parcels of 20-year-old vines on the border of Bouzy and Tauxières: the chardonnay is planted on the Tauxières side, in the west-facing vineyard of Les Argentières, while the pinot noir is from Les Monts des Tours on the Bouzy side, which is more southerly in exposition, with a more gentle slope. In the first vintage, Lahaye fermented with selected yeasts rather than native ones: "In the first year," he says, "I wanted to see the real effects of vinification without sulfur, and I didn't want to risk the variability of indigenous yeasts." Satisfied with his progress, he has fermented subsequent editions with native yeasts; the wine is made entirely without added sulfur from start to finish, and left on its lees until July, with no racking until bottling. While Violaine has always come from a single harvest, it hasn’t been released as a vintage-dated champagne, although this will change beginning with the 2013 or 2014 release.

Paul Bara Bouzy Rouge 2018 Still Wine
100% Pinot Noir Coteaux Champenois In spite of his doctor's disapproval, Louis XIV preferred the good wines of Champagne to any other and the wine of Bouzy was thus one of the items in the King's inventory ledger at the Court of Versailles. Paul Bara's Bouzy Rouge is one of the best in this category of still red wines. It is made from old vines of more than fifty years in age that are grown in a vineyard with ideal exposure.   The grapes are harvested and sorted by hand on a sorting table, ensuring that only the ripest and healthiest of them go into the wine. Bouzy Rouge is then fermented and matured in stainless steel vats until reaching its full potential. The resulting red wine makes a sensational partner for light grilled meats, roasted veal in herbs or country-style ham. Maison Paul Bara is a member of the famous Académie des Vins de Bouzy.

Paul Bara Comtesse Marie de France 2012
100% Pinot Noir Paul Bara's Prestige Cuvée Comtesse Marie de France is named after the daughter of Éléonore d’Aquitaine - first produced in the 1960s for the Chez Denis restaurant in Paris. It consists of 100% Pinot Noir and is only produced in very small quantities, each bottle is individually numbered. Age of the vines: approx. 50 years 9 years of bottel maturity Each bottle individually numbered Dosage: 8g/l Tasting Note from Domaine Paul Bara: This wonderfully mature champagne reveals a deep and structured nose of juicy fruits, such as yellow peach and overripe apple. Candied notes verging on honey and fresh baking aromas then appear, with a delicious hint of praline and nougatine. Tasty and full in the mouth, with more of the pleasing aromas of the nose, as well as a hint of citrus peel and a slight peppery touch on the finish. This is a rich, full and generous wine, which will be perfect for a meal served exclusively with champagne. Tasting FEB20: Cocoa, richness, mocha, brioche, creamy, generous, paired with 2008 freshness.

Paul Bara Special Club Rosé 2016
60-70% Pinot Noir 20-30% Chardonnay 5% Bouzy Rouge Dosage: 7g/l 5-6 Years bottle aging Bara has been making a Rosé des Spécial Club since 2004. Approx. 8% red wine is added to the club blend. This champagne is the first rosé in the history of Club Trésors de Champagne. The quantities are limited. Tasting FEB20 - vintage 14: 2014 is a very good year for the Rosé Club. Possibly because the juicy fruitiness balances out the darkness of the very vinous Bouzy Pinot. Finesse, extremely complex fruit, long, very balanced, very nice freshness, long finish. Review by Stephan Reinhardt, eRobertParker.com # Special Interim Issue Report (Nov 2014): Rating: 92 - The label is terribly pink but the color salmon rose and the bouquet of the 2008 Special Club Grand Cru Brut Rose is absolutely delicate and subtle on both nose and palate. Bright flavors of raspberries, roses and red currant lead to an elegant, fine, well balanced and absolutely delicate and serious Rosé Vintage Champagne, which exemplarily reflects the purity and freshness of the 2008 vintage as well as the expressive house style. Peter Liem: While its flavors are pungent and demanding, it appears nearly weightless, carrying its intensity with an effortless poise and grace. It feels long and energetic on the palate, its vibrant fruit anchored by vividly chalky minerality, and it finishes with multi-faceted fragrance and outstanding length. This is superb, one of the finest wines that Bara has made in recent memory, and a few more years in the cellar will surely result in even greater complexity and expression.
