A stunning vinous, champagne for beginners and experts alike. Moritz OCT22: A charming, uncomplicated cuvée with a very vinous character. A dominant red fruitiness is carried by a light herbaceousness, which balances the champagne nicely.

75% Pinot Noir, 25% Chardonnay 4-8% red wine (Bouzy Rouge) Dosage: 9g/l Aged for 12 months in oak Instead of a Saignee, this is a blend of 4-8% red wine (Bouzy Rouge), vinified in wood for one year. The rosé from Billot is particularly celebrated and prized in the USA for its expressiveness and extreme vinous character. It is less a siren for fans of fresh, mineral-driven rosés, and eschews the heavy earthy character of a Rosé de Saignee. Billiot's decision to forgo the Saignee method is typical for the domaine, with wines noted for their vinous nature, body, balanced and expressiveness, all while maintaining a cool and refreshing character. No one component is allowed to tower above the rest.

50% Pinot Noir, 50% Chardonnay Dosage: 6g/l 6 month in oak barrels  In 1999 the house created its second Tête de Cuvée, named for Laetitia's daughter, Julie. It is created from equal parts Pinot Noir and Chardonnay. Usually a single vintage champagne, although it is not marked as such on the label. The barrel-matured cuvée has a distinctive and individual character. Pairs beautifully with many meat dishes, smoked foods, and flavorful dishes — often called a "fireplace champagne."

Average age of the vines: 30 Years Vinification: 70% in enamel tank, 30% in old barrel, 75% with malolactic fermentation, matured for up to 7 years on the lees   Domaine's entry level champagne, one that nonetheless displays a challenging complexity. Crisp & fruity (primarily apple) and nuanced.   60% Pinot Noir, 40% Chardonnay, Dosage 6g/l Nicola FEB24: Ultra strong, complex, slightly matured flavors but spot on, extremely long, multi-layered, also a bit of a stony element which makes it even more interesting. Ultra balanced. Moritz FEB24: Even with the "entry-level" cuvée, one can feel the elegance and complexity that Eric skillfully wants to encapsulate in the bottle. Everything is very delicate, not too loud, yet very present. A harmony of marzipan, roasted nuts, chalk, and a light smokiness greets the senses. The palate brings out more of the fresh, chalky flavors, which suits the cuvée extremely well. An extremely long finish ties the whole package together. What is sold as an entry-level at Maison Rodez, without overstepping, could be the pinnacle in many other houses. Tasting FEB20: Very strong, made another leap forward since tasting a year ago, very dense, great  Tasting JUL21: very complex release, very nutty, very layered, browned apple, slight ripeness, cool, great depth (Eric's language for minerality, chalk contact of vines, mouthfeel).

60% Pinot Noir, 40% Chardonnay Chardonnay reserve wines 1983-2012, Pinot Noir from 2013 No malolactische fermentation Vinified im enamel steel tank 48 monath aging on the lees Distinctive cuvée created using a perpetual blending system (solera) since 1980. At this point a blend of more 20 vintages, aged in an enamel tank. A portion is removed regularly, to be refreshed with a portion of the current vintage. This system, similar in style to the solera system, differs only in that the wine is not stored in wooden barrels. The proportions used for the blending remain a closely guarded house secret, although it has been revealed that the share of Chardonnay is slightly ahead of the rest. In 2005 the cuvée grew too voluminous for a single tank, and so a portion was added into a second tank. This 'retanking' provided an interesting experiment into the complexity of this style of maturation: the winemakers suddenly had to deal with a new and unwanted oxidative effect. By 2009 order had been restored to the system and the decision was made to start refreshing the cuvée with a larger proportion of newer, highly ripe vintages. Cuvée Laetitia is the most challenging, complex and distinctive top blend from the Billiot domaine. For advanced champagne drinkers only, especially those who enjoy a well matured wine!  Beautiful when paired with a variety of foods, especially a fragrant cheese plate! Moritz OCT22: A cuvée made using the Solera method, which is dominated by a warm-hearted yellow fruit. There is a subtle spiciness in the finish, which gives the cuvée a nice tension.

100% Chardonnay, Dosage: 5g/l Assemblage using 5-6 vintages: 2007 - 41%, 2006 - 20%, 2005 - 17%, 2004 -15%, 2003 - 3%, 2002 - 4%. Average age of the vines: 32 years. Vinification: 70% used wood, 30% enamel tank; 70% without malolactic fermentation, 30% with.  Terroir: Le noyer St Pys, les Morins, les Genettes, les Champsaults, Les Secs, Les Bermonts, Les Crayères, les Agusons, les Cheminots.   This Blanc de Blanc does not belong to the minimalistic, mineral-driven style, but rather is round and balanced with a touch of fragrant flowers. Complex and nuanced due in part to the barrel influence and a perfect pairing partner at the table — to more than just fish!    Nicola FEB24: A slightly richer release at the moment, very generous, a somewhat noticeable influence of wood, dried fruits, brioche. Moritz FEB24: Light, but very nice reduction, nose and palate reflect each other perfectly. Salty, wet stones, white almond are predominant, with a background of some dried apricot. All very calm. Very subtle, perfectly integrated wood notes. The mousseux is round but precise, and the long finish is very chalky.

More full-bodied and vinous than the Blanc de Blancs. Complex, deep fruits, and elegant with a long finish. 100% Pinot Noir Dosage: 5g/l Nicola FEB24: (has those green aromas again that I can't place) Winey, full-bodied, strength, intensity, elegance. Moritz FEB24: Juicy blackberry, licorice, and a nice cardamom spice give the BdN great complexity. On the palate, full-bodied and juicy, but somewhat leaner than the Blanc de Blanc. The tight acidity provides a beautifully long finish. Tasting FEB20: Extremely long, elegant, great pinot fruit, dense, harmonious, balanced, not too heavy, creamy, acidity very well integrated
