In 1994, François Chaumont was able to take over 5 hectares of his family's vineyards, which had previously been leased out. François studied viticulture and oenology specifically for this purpose. He sold his grapes until 2008, when he realised a dream: he was the first to bottle a champagne that comes 100% from the Grand Cru village of Puisieulx (pronounced: Püisijö) to show the great potential of his vineyards.
Puisieulx is located in the Montagne de Reims and is rather unknown, which may be due to the small area of only 18 hectares. However, in view of the neighbouring municipalities of Mailly-Champagne and Sillery, its Grand Cru status is hardly surprising. Pinot Noir and Chardonnay, which François cultivates in a ratio of 2/3 to 1/3 and always bottles single-varietal, feel particularly at home on the chalky, gravelly soils.
12,000 bottles are produced from 1.5 hectares, the rest is sold to Champagne Palmer. However, François vinifies his champagnes in the cellars of his wife Marie-Hélène Littière's domaine in Œuilly in the Marne Valley. They are matured exclusively in stainless steel and malolactic fermentation is always carried out. This ensures a full-bodied, creamy texture with juicy fruit that perfectly reflects the potential of the Puisieulx terroir.
