Peter Liem: Long lees aging is an important component of Egly’s winemaking, and this is particularly evident in the V.P. Extra Brut, composed of 70 percent pinot noir and 30 percent chardonnay. V.P. stands for Vieillissement Prolongé, or extended aging, and this cuvée typically spends five to six years in the cellar before release, resulting in a wine of rich complexity and refinement.
