La Collection Crayères - The Magic of Aging
Chef de Cave Cyril Brun is of the opinion that time as the “fourth ingredient” shapes the soul of wines. To this day, time has always been a strategic priority at Charles Heidsieck. As early as the eighties, the house showed - in the spirit of its founder Charles Camille Heidsieck - as a pioneer and pioneer the aromatic development potential of its "non-vintage" Brut Réserves.
The Crayères Collection is an anthology of outstanding vintages and a selection of old “Mis en Cave” non-vintages.
Mis en cave wines - what makes them so special:
In 1987, Charles Heidsieck was the pioneer in revealing the year of bottling and the disgorging date of their non-vintages. For experienced champagne drinkers, this enabled them to guess the year of harvest and perceive the influence of time in comparative tastings. The amazing freshness of the “Mis en Cave” wines is in complete contrast to their old age and underlines the incomparable winemaking expertise of the house. They were assembled by the talented cellar master Daniel Thibault (1947 - 2002) and selected with care by today's Chef de Cave Cyril Brun.
After 20 to 30 years of aging, the wines have reached a level of grandeur and aromatic quality far beyond any description. Every wine has a silky structure, the dimensions of which underline the consistency of the famous Charles Heidsieck style. Contrary to popular belief, the Crayères 2020 Collection demonstrates that non-vintage champagne can also mature! A masterpiece from the league of exceptional winemakers by Charles Heidsieck.
