The grapes for the Ambonnay Grand Cru Brut Nature are grown on old vines with an average age of 42 years on lime, clay and sandy soils in the following favorites: Les Saints Remys, Les Beurys, Les Crayères, La Grande Ruelle, Les Bermonts and Le Parc . The six lieu dits are all fermented individually in wood, the quality of which results in the later wine, starting with Ambonnay and Les Crayeres to sapience (from 2013 with Marguet's own vines). The barrels vary from second to ninth occupancy. The plants have been plowed manually with the horse since 2010. Marguets champagne are generally neither enriched nor provided with shipping dosages. It works with minimal intervention, without pumps and with little to no sulfur.
The 2015 Ambonnay Grand Cru Brut Nature is a blend of 53% Pinot Noir and 47% Chardonnay. Tirage on July 13, 2017, disgorged in April 2020. 20 mg SO2 were added and filled with 0 grams of residual sugar without shipping dosage.
Nose: Green apple, granny smith, lime zest and oyster shells mix with the floral top note of white flowers, cucumber herb, lemon oil and lilac. Delicate fennel notes in the overtone area as well as a Weckmann with lemon pouring and a touch of woodruff outline this citrus-driven and saline-looking composition made of 53% Pinot Noir and 47% Chardonnay exclusively from Grand Cru locations.
Mouth: In the first taste, the 2015 Ambonnay has clear autolysis notes and the Weckmann with lemon icing is also generously coated with butter. The small-pearled Mousseux with a clear citrus tip makes it increasingly slim on the palate and drives it aromatically towards Granny Smith and lime zest, without foregoing the spicy bass of roasted and slightly salted hazelnuts. Herb, flanked by animating tannins, has a silky, fine texture. Color analogies for this wine are to be found in the green-yellow area. Spicy with fine spice and notes of nuts and salted lemons in a long, stringy finish. Makes you really thirsty!
