Biodynamics is neither rocket science nor an all-blissful savior and certainly not a guarantee for high-quality champagne.
This still includes the winemakers, who handle the processes in the vineyard and cellar with passion, experience and skill to accompany and intervene if necessary.
In the best cases (like those offered here in the package), however, this arises careful economic and working methods in partnership with nature, highly exciting and charismatic, individually shaped wines.
Often it even seems that the character of the winemaker can be found in his "foaming works".
All three champagnes presented here are without dosage, so "brut nature", a style that does not forgive mistakes or unclean reading material.
They are "structural wines", reduced to their basic structure, to the inner idea, and precisely for this reason, remarkably different and different.
No blenders, made up with sugar or loud aromas, but pleasantly exciting, unexcited Mavericks.
Please do not enjoy this champagne on constricting "flutes" but from one (Wine) glass that gives you the chance to unfold and show your many facets.
