100% Chardonnay, Blanc de Blancs
Sourced from 7-8 different sites, all cultivated with old slopeside vines (facing ESE). Especially from the Grand Cru site of Les Buzons (Cramant). Other parcels include: Pimonts, Goutte d’Or, Rouillées, Fourches and Gros Monts.
The vines average between 40-60 years of age, although in some cases they are believed to be even older.
Terroir: Thin soil layer over chalk parent rock.
Vinification: Primary fermentation takes place in small, old Burgundy Barriques. The wine sees no malolactic fermentation, filtration or fining. Anything that could potentially stress the wine is avoided; this preserves and develops the maximal expression of terroir. Following primary fermentation, the wine is matured for one year in barrique.
Dosage: 6-8 g/l.
Fleur de Passion is a serious and traditional champagne inspired through the hard work of Jacques Diebolt (see Winemaker Profile). A rare jewel needing considerable time in the bottle in order to develop its full and stunning potential.

2007 Diebolt-Vallois Fleur de Passion Blanc de Blancs
The nose is unimaginably different from 2008, more immediate and of significantly broader and deeper caliber. Here we are invited to stewed mushroom compote with lemon pepper, drippings from fat hearty grilled sausages, old books, almond paste, faint notes of eucalyptus, thick strawberry jam, sticky fishing boat railing, saline, varm crumpet with melted butter, a little dried tobacco, Root beer and planed oak.
Then developing tertiary aromas, butter-fried morels, petroleum, parsley, orange blossom and worn leather sole. The main expression of heavy composers (not their physical constitution but their musical works, of course), undergrowth.
The mouth feel is nothing short of divine. Oily, buttery, creamy and maritime with vital acid cutting through the wines fatty structure in clinical but oh so delicious way. The balance is streamlined and unparalleled with tropical fruit, apricot, peach, persimmon and mature honeydew melon. Beautiful length with structuring “minerality” and well balanced…well everything!
How Diebolt-Vallois manage to create these unexpected but crazy appealing wines is beyond us. The wine is far from self-evident with its polemical nature, dripping with heather honey, quince marmalade, grated fresh ginger and rustic undergrowth notes in greasy cream, veal stock, lobster shell, ripe golden delicious, fresh apricot, confit lemon, warm English muffin and the metallic vibrant feel of freshly caught mackerel and whey cheese.
Fleur de Passion 2007 offers a palette that both surprises and overwhelms. It is definitely not a flirty, public wine for all palates, but for those who appreciate e.g. Pol Roger Sir Winston Churchill from the early 2000’s it could be a well targeted investment. How someone can appraise FdP 2008 higher than the 2007 at the present will remain a mystery to us (not considering the 2008 potential of course). Should be developing nicely several years to come but drinks very well today.
